Cultural Note
Bouillon is the foundation of French cuisine. Auguste Escoffier classified five 'mother sauces' of French cooking, many of which begin with a good stock. Historically, 'bouillons' were also a type of Parisian restaurant serving affordable soups and stews to working people.
