Cultural Note
While Italian cuisine is not generally very spicy, Calabria is the exception. The region is famous for its peperoncino (chili pepper), and 'nduja -- a fiery, spreadable salami -- has become internationally fashionable. Calabrians even have a peperoncino festival in Diamante every September.
