Portugal is one of the world's largest olive oil producers, and azeite is the foundation of Portuguese cooking — used far more liberally than in most cuisines. When Portuguese say 'azeite,' they always mean olive oil; other oils are specified (óleo de girassol, etc.). In Brazil, olive oil is imported and more expensive, so cooking oil (óleo) is more commonly used.
