Cultural Note
Grilled sardines are the symbol of Lisbon's Santos Populares festivals in June, especially Santo António on June 13th. Whole sardines are grilled on charcoal and served on slices of bread to catch the juices. Portuguese canned sardines (conservas) are also a gourmet product with vintage-dated tins. The Portuguese say sardines are best from May to October when they are fattiest.
